Bubbles is a hyperactive Yellow Tang Fish who eventually escaped into the ocean with the rest of the tank fish. Here, three half flutes of bubbles are presented to you to enjoy and identify: A proper Champagne, a Cava from Spain, and an Italian Prosecco. One of the most curious wines from France is unapologetically pink, a bit sweet, and bubbly. This wine comes not from a town, or even a small village, but rather from the tiniest of hamlets in the south of France. Consumed as an aperitif, this selection also pairs up nicely with our new array of Chocolate Boards and Crème Brûlée.

EIGHT YEARS OF RIOJA

On your left, a brand-spanking-new release from Selvanevada from the 2022 vintage. And on your right is an older 2014 Rioja from a producer named Urbina. Now you can experience how the white Rioja made from the Viura grape ages right before your nostrils. I'm going to be honest here, the wines are both different from each other and from most white wines you've ever consumed. Both of these incredible wines are geared to be enjoyed with Spanish Somm Board!

This wine is fascinating! It's a blend from multiple regions throughout Oregon that's also certified Low Sulfur, Natural, Organic, Sustainable and Vegan. Before being bottled, it sees stainless steel, concrete egg, and amphora. Old Love is bright and zesty with various citrus flavors that dance across the palate. This Old Love might just be your new love.

Fans of Pinot Noir are sure to absolutely love this Beaujolais made from the Gamay grape. A stupendous value, this wine comes from one of the newest Crus in Beaujolais, Régnié. It's soft, yet bursts with intense raspberry and mineral tones.

Two half glasses of the most fantastic Pinot Noirs are placed in front of you, and simply put, one is a Burgundy and one is not. Correctly identify the Ron Burgundy and you may find yourself in a glass case of emotion! Honestly, Burgundy can really disappoint. But here, you’re guaranteed to experience a stunning Burgundy in the context of another rockin’ Pinot Noir. Should you find Ron Burgundy, and correctly guess where the other Pinot comes from, the Sommelier will reward you with a nip of dessert wine. [Hint: it’s either Oregon or California.]

PASO D'ORO - CABERNET SAUVIGNON

PASO ROBLES, CALIFORNIA - 2021

This right here is the inaugural vintage release of this wine - and it slaps! Heck, it's already a staff favorite. In Napa and other parts of California, there's been a never-ending race to fashion the biggest, most overblown wines. But Sommeliers across the country are clamoring for more balanced profiles. This Paso D'Oro is in complete harmony.

RUNNING OF THE BULLS

The most recognizable region in Spain for wine is Rioja. Spaniards enjoy their Rioja reds fully mature. So much so, they have three designations that require different amounts of age before being released. Those include Crianza (24 months), Reserva (36 months), and Grand Reserva (60 months!) The incredible 2011 López de Heredia featured is fashioned by winemaking sisters María-José and Mercedes Heredia. It is a Reserva with additional bottle age. And right next to it is the freshest Rioja we could find; the 2022 Luberri Orlegi. A full decade of age differentiates these wines. Which do you prefer? Try this pair with the new Spanish Somm Board!

A MASTER SOMMELIER'S FRENCH RED

Years ago, I was seated with six or more Master Sommeliers for dinner in California. This was a high concentration of Master Somms, seeing as how there are only 273 in the world! The moment was tense with anticipation when the server brought over the wine list. What wines do Master Somms order? Turns out, they zero in on great wines that are, get this…. very inexpensive! So, behold a wine they would have ordered: the 2022 Domaine Rimbert 'Les Travers de Marceau' from Saint Chinian, France. This French selection is a medium-bodied blend, lightly funky, and is certainly Master Sommelier approved. It's. That. Good.

MORTICIA'S DARK WINE DESIRE

Served here is Morticia Addams enjoying her favorite Italian wine, Talamonti Kudos. The wine has an evil streak with all its dark blackberries, licorice, bay leaf, and violet tones. It's made from Montepulciano and Merlot, with the latter smoothing out the villainous monster inside.

BLACK WINE

Everyone knows Malbec is from Argentina. However, the birthplace for the varietal is actually the French commune of Cahors, France. Since the actual year 50 B.C, wines from Cahors have been referred to as Black Wine, as it's so robust and dark. Here, we present two half glasses of Malbec; one from Cahors and one from Argentina The one from Salta, Argentina is totally naked. And the French one is cloaked in oak. Go!
